Peat’s Thoughts: The barrels for Elijah Craig 23 year are drawn from the middle floors of the rick houses, where the effects of long aging are mitigated by the more moderate temperature fluctuations. This careful barrel selection, draw from Heaven Hill’s inventory of over one million aging barrels, means the whiskey offers depth and complexity but still perfectly maintains the delicate balance between barrel and distillate. Without a doubt, this was truly a lovely experience. The finish was sublime; not too sharp and just long enough for you to appreciate it on your palate. On the nose, almost a crème brûlée flavour. After 23 years you would think it would be extremely oaky, yet somehow the balance is delicate.
